A lovely supper just for me

Matt is at the match (Arsenal v Newcastle, and he's just texted to say he's sitting two seats away from Maradona so he sounds pretty happy!) and O is in bed. I'm sitting in front of the telly watching Mistresses (I'd never be allowed to watch this if M was here!) I'm shattered after a very long and tedious afternoon of classes so I made myself a lovely little supper just for me - potato rosti with smoked salmon and horseradish cream. It looked gorgeous and tasted divine. Unfortunately my camera is out of battery so I can't give you a pic, but here is the recipe which is vaguely remembered from either Olive or Delicious magazine.

Potato rosti with horseradish cream

Potato rosti, homemade if you desire, bought from Waitrose like me if not
Smoked salmon, my favourite is Forman's London Cure
Creme fraiche
Horseradish
Lemon juice
Dill

Mix three teaspoons of creme fraiche with a teaspoon of horseradish. Chop some dill. Place the smoked salmon on top of the potato rostis. Squeeze over some lemon juice. Dollop on the horseradish cream and sprinkle over the dill. Et voila! Serve with a large ice cold glass of Nepenthe Reisling from the beautiful Adelaide Hills.

Thanks for the sweet comments Lindsay. I think those grasses are a type of liriope, from memory - dirt cheap and have grown tenfold at least.

I've been a bit quiet but life has been busier of late, going back to work in the new year and Ella back at kinder, the days just disappear. I think Monday is the only day that I don't have commitments. How is school going?

Thanks Victoria, we've been looking for something similar to plant in our garden, which is also pretty green. But also thinking of introducing some pops of colour for this summer.

School is going ok, half term next week and I must finish my assignments. Lots of ideas and notes scribbled down but have so much to do.

Hope you are enjoying being back at work. How did your session with the personal trainer go? I could also do with fitting something like that in, the waistband on my jeans is bearing the brunt of my Christmas excess still!
